Ingredients
- 500 gms (1.11 lbs) pork tenderloin
- 1 red bell pepper
- 1 green bell pepper
- 200 gms (0.44 lb) pineapple chunks
- 30 mls (0.13 cup) soy sauce
- 30 mls (0.13 cup) rice vinegar
- 60 mls (0.25 cup) ketchup
- 50 gms (0.11 lb) sugar
- 20 gms (0.04 lb) cornstarch
- 60 mls (0.25 cup) water
- 30 mls (0.13 cup) vegetable oil
- 3 garlic cloves
Instructions
- Slice the pork tenderloin into thin strips.
- Cut the red and green bell peppers into bite-sized pieces.
- In a small bowl, mix soy sauce, rice vinegar, ketchup, sugar, and water to make the sweet and sour sauce.
- Dissolve cornstarch in a little bit of water to make a slurry.
- Heat vegetable oil in a wok or large skillet over high heat (around 190°C/375°F).
- Add garlic cloves and fry for 30 seconds until fragrant.
- Add the pork strips and stir-fry until they start to brown.
- Add bell peppers and pineapple chunks, stir-fry for another 2-3 minutes.
- Pour in the sweet and sour sauce and bring to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens.
- Serve hot over steamed rice or noodles.
