Ingredients

  • 500 gms (1.11 lbs) pork tenderloin
  • 1 red bell pepper
  • 1 green bell pepper
  • 200 gms (0.44 lb) pineapple chunks
  • 30 mls (0.13 cup) soy sauce
  • 30 mls (0.13 cup) rice vinegar
  • 60 mls (0.25 cup) ketchup
  • 50 gms (0.11 lb) sugar
  • 20 gms (0.04 lb) cornstarch
  • 60 mls (0.25 cup) water
  • 30 mls (0.13 cup) vegetable oil
  • 3 garlic cloves

Instructions

  1. Slice the pork tenderloin into thin strips.
  2. Cut the red and green bell peppers into bite-sized pieces.
  3. In a small bowl, mix soy sauce, rice vinegar, ketchup, sugar, and water to make the sweet and sour sauce.
  4. Dissolve cornstarch in a little bit of water to make a slurry.
  5. Heat vegetable oil in a wok or large skillet over high heat (around 190°C/375°F).
  6. Add garlic cloves and fry for 30 seconds until fragrant.
  7. Add the pork strips and stir-fry until they start to brown.
  8. Add bell peppers and pineapple chunks, stir-fry for another 2-3 minutes.
  9. Pour in the sweet and sour sauce and bring to a simmer.
  10. Stir in the cornstarch slurry and cook until the sauce thickens.
  11. Serve hot over steamed rice or noodles.
